Easy Curry
2 level tbsp. flour
2-3 tsp. curry powder
1 cup chicken stock (add more if the consistency is too
thick)
2 tsp. chutney (optional)
oil (to sauté onions)
1 onion
3 carrots
(you may add other vegetables – I usually add broccoli)
Cooked meat (optional)
Salt and pepper
Saute onions in vegetable oil (I use 1-2 tbsp. olive oil)
Add carrots and other vegetables
Add curry powder and flour and stir to coat vegetables
Slowly add stock while stirring (add more if the consistency is too thick)
If using cooked meat, cut into pieces no bigger than 1” and add to
pan
Bring to the boil and simmer until vegetables are cooked.
Serve on a bed of rice
