Potato Skins

Don't discard potato skins after peeling potatoes.
Use only those that aren't green.
Soak in cold water while the oven is heating (they may turn pink but that's ok)
Dry
Toss/coat skins in olive oil
Bake at 400 degrees for 15-20 minutes
