Instead of using the gingerbread house kits that are usually broken before you get them home, use a milk carton as a base, you can either paint them first, glue on graham crackers or cover the whole thing in frosting and candy. This picture I found has a cereal decoration. Cut off the bottom first if you think the carton is too tall.
