A suggestion from Marjorie Harris (Thrifty - Living the Frugal Life with Style) is to make refrigerator soup. The idea is to put chicken stock in a pot (or slow cooker) chop up any leftover vegetables, add the remains from pasta sauce in a jar, ham, sausage, turkey, chicken. Basically anything that is compatible in your fridge or freezer.
Note: Beans or pasta are also good additions.
