Green Stuff

We have a traditional Christmas family dish made with pistachio pudding and pineapple. The recipe was given to us by a neighbor years ago and it's always been referred to as "Green Stuff" in our family.

Apparently the official name is Watergate Salad. It's a great dish to take to a potluck Christmas event so I always keep ingredients on hand this time of year. It's always a big hit.

Watergate Salad
4 oz Pistachio instant pudding mix
8 oz cool whip
1 can crushed pineapple
1 can pineapple (cubed and drained)
1 cup mini marshmallows
nuts (optional)

Leave the frozen cool whip out until it resembles whipped cream. Stir in the pistachio pudding, then add pineapple. Top with marshmallows. Some recipes show 20 oz crushed pineapple, but I prefer to use both crushed pineapple and the cubed pineapple.
